A washed Guatemalan from Aurelio Villatoro's award-winning farm in Huehuetenango, grown at 1,700 metres and processed with a patience that shows in the cup. Dates, caramel and milk chocolate - this is a quietly satisfying filter coffee, gentle and well-rounded, with a warmth that suits a slower morning.

Soft, sweet and slow-warming filter
Finca Villaure is a washed Guatemalan filter coffee from Aurelio Villatoro's farm in the Antigua Valley - grown at 1,700 metres on steep slopes in the village of Hoja Blanca, close to the Mexican border in western Huehuetenango. Aurelio started his plot in 1986, building it gradually from a small family holding into a farm that has been picking up awards since 2002.
The care he puts into the process shows at every stage: only ripe cherries are picked between December and March, pulped within six hours, fermented in concrete tanks for 24 to 36 hours, then washed and dried slowly on cement patios with each grade kept separate.
In the cup it's warm and unhurried - dates and caramel bring a gentle sweetness, with milk chocolate rounding things out into something soft and satisfying. A coffee that rewards a slower morning, brewed as a pour over or in a cafetiere, though it holds up well however you make it.
Bradley and the team at Horsham source it through Coffee Bird, and it's the kind of coffee where the sourcing relationship shows - not in the marketing, but in the consistency of the cup.
