Grown by Wilber Gómez at high altitude in Saladoblanco, Huila, this Pacamara lot is honey processed - leaving just enough fruit contact to build sweetness and soften the variety's naturally bright, citrus-driven character. In the cup: passionfruit and pomelo lifted by floral aromatics, with a dense, satisfying mouthfeel that holds everything together.

Vivid, fruit-forward and beautifully structured
Pacamara is a variety that tends to announce itself - big, expressive, with floral aromatics and a citrus-bright acidity that gives the cup a real sense of place. This lot, grown by Wilber Gómez at altitude in Saladoblanco, Huila, leans into those qualities, while the processing adds a layer of nuance that makes it easy to sit with.
Assembly have used a semi-washed, or honey, process here: after pulping, some of the fruit mucilage is left on the bean before a 48-hour controlled fermentation. That stage builds sweetness and softens the acidity just enough to bring the cup into balance, without dulling what makes Pacamara worth seeking out. The result is passionfruit brightness, a pomelo-like citrus lift, and a mouthfeel that feels dense and structured rather than sharp.
It's a coffee that rewards attention - vivid and fruit-forward, but composed. Pour over or filter brewing suits it well, giving the aromatics room to open up and the flavours space to settle into something you'll want to finish slowly.
