Orange, Toffee Apple
Grown at altitude in Cobán by Carlos Estrada, this washed Catuaí from Assembly carries real clarity and character. Orange brightness, toffee apple sweetness and a lingering, sticky finish make it a natural fit for filter - the kind of coffee that's easy to enjoy and quietly hard to put down.

Catuaí is one of those varieties that tends to get taken for granted - reliable, widely grown, often the backbone of everyday coffees. But grown at 1,740 metres in Cobán, central Guatemala, on Carlos Estrada's Santa Irene farm, it shows a different side entirely. The washed process does what it does best here: strips things back, lets the fruit speak clearly, and gives the cup a clean, structured quality that feels considered rather than accidental.
In the cup, you get orange - bright and well-defined - alongside a toffee apple sweetness that rounds things out, and a finish that lingers with a pleasant stickiness. It's a coffee that rewards a slower pace: a pour over on a quiet morning, or a cafetiere left to cool slightly before you get into it. Assembly have been working with producers and sourcing carefully since 2015, and this is a good example of what that attention looks like in the cup - a single origin that's expressive without being showy, and satisfying without being simple.
