A Sidra lot from producer Mauricio Shattah in Tolima, Colombia, this coffee has already appeared twice on the world competition stage. Fermented with wine yeast at precise temperatures, then dried slowly, it produces a fruit-forward, velvety cup - peach and dark rum notes that feel vivid and composed in equal measure.
Silky, fruit-forward cup with pedigree
This Sidra lot from La Negrita has a quiet but impressive history behind it. Assembly's Head of Quality, Claire Wallace, used it to place third at the World Barista Championship in 2022, and it's now back in competition as the coffee chosen by Jake Mummery - Irish Brewers Cup Champion and Door Café Manager - for his World Brewers Cup routine. That kind of track record tends to speak for itself.
What makes it so compelling in the cup comes down to Mauricio Shattah's precise approach to processing. Ripe cherries are fermented in stainless steel tanks with saccharomyces cerevisiae - a wine yeast - for 18 hours at a carefully controlled 17°C, with a constant nitrogen flush to prevent astringency and preserve clarity. The result is a coffee with a distinctly fruit-forward character, vivid aromatics and a velvety structure that carries through from first sip to finish. Notes of peach and dark rum sit together with a sweetness that feels earned rather than imposed. After fermentation, the coffee dries slowly over six to eight weeks, which gives the final cup its clean, composed quality.
Grown at altitude in Villa Restrepo, Tolima, this is a coffee for those who want something a little more considered in their cup - and don't mind the story that comes with it.
