Vanilla, Apricot
Linarco Rodriguez's Pink Bourbon from Palestina, Huila is a clean, bright washed coffee with vanilla sweetness, ripe apricot and a sticky, jammy depth that lingers. Processed slowly at cool temperatures, it's the kind of cup that rewards a pour over or Aeropress - expressive and precise, every note in its right place.

Pink Bourbon has become one of Colombia's most talked-about varieties, and Linarco Rodriguez's lot from Palestina, Huila, shows exactly why. Grown at 1,710 metres, the coffee undergoes an open fermentation of around 48 hours at 15°C - slow and controlled, which preserves the variety's natural clarity. After washing, the beans dry gradually under cover for 25 days at cool, stable temperatures, then rest for a further 12 days before packing. That care at every stage comes through clearly in the cup.
The result is bright and clean - vanilla sweetness, a ripe apricot note, and a sticky, almost jammy quality that gives it real presence without heaviness. It's the kind of washed coffee that rewards a slower brew: a pour over or an Aeropress where the clarity of the cup can do the talking.
Assembly have been working with producers and scientists across the supply chain since 2015, and this lot is a good example of what that attention looks like in practice. Precise without being fussy, expressive without needing to shout - it's a coffee that knows exactly what it is and doesn't feel the need to explain itself at length. Which, frankly, is a quality worth appreciating.
