Grown at altitude and fermented with care, it's a natural that feels composed and clean - well suited to pour over or a filter machine.

Dark-fruited, warm and quietly indulgent
Felipe Contreras has been refining his processing approach at Finca Gascón for years, drawing on a broad set of protocols to coax structure and sweetness from his Catuai lots. For this natural, the cherries are dried whole - fruit intact around the seed - and after sorting and weighing, they go into GrainPro bags for a 96-hour fermentation before milling.
That careful handling shows clearly in the cup. What you get is vivid red fruit up front - raspberry in particular - with a subtle boozy warmth that sits somewhere between ripe and refined. The finish is sweet and rounded, without the rougher edges that can sometimes come with naturally processed coffees. Grown at altitude in Antigua's San Juan Gascón, this is a coffee that rewards a slow pour over or a filter machine brew, somewhere the fruit and complexity have room to open up.
