Raspberry, Lavender
A rare Ethiopian landrace grown high in Colombia's Huila region, this naturally processed Wush Wush from Jonathan Gasca's Finca Zarza leads with raspberry, lavender and clean fruit clarity. Assembly's multi-stage fermentation coaxes out the variety's distinctive floral aromatics and fruit complexity - pour over or filter gives it the space to open up properly.

Floral, raspberry-bright and quietly vivid
Wush Wush is a rare Ethiopian landrace variety that found its way to Colombia, and at Finca Zarza in Huila, Jonathan Gasca has made it something of a speciality. Working at 1,750 to 1,800 metres, he hand-selects only fully ripe cherries before putting them through a carefully staged fermentation process - 24 hours of anaerobic fermentation, a 12-hour controlled oxidation rest in sealed bags, and a final submerged fermentation - before the cherries are sun-dried slowly in parabolic dryers for up to 12 days. The result is a coffee that tastes of raspberry and lavender, with a brightness that feels vivid without being sharp.
This is the seventh release in Assembly's 10-Year Series, and it carries a particular significance: Assembly were among the first UK roasters to release a Wush Wush back in 2017 - their very first limited edition coffee. Nearly a decade on, returning to the variety via Jonathan Gasca's Finca Zarza feels like a fitting marker of how far Colombian processing has come. Sourced through long-standing partners Cata Export, this is a filter coffee for moments when you want something floral and fruit-forward - best enjoyed as a pour over or through a filter machine, where all that aromatic complexity has room to open up.
