Sun-dried, honeyed and deeply winey
From the slopes of Volcán Barú in Boquete, this Caturra lot from Carmen Estate is a naturally processed coffee that leans into sweetness and fruit definition with a light touch. The cherries were selectively hand harvested and dried whole on open patios, moved carefully throughout to keep the drying even - a slower, more attentive approach that shows in the cup.
The result is fruit-forward, with a rich, rounded mouthfeel and a warmth that sits somewhere between ripe strawberry and honeyed sweetness. The estate describes the style as 'winey', and that feels right - there's a depth and gentle complexity here that goes beyond simple fruitiness. Grown at 1,800 metres in volcanic soils, the altitude brings clarity and structure to what could otherwise tip into jamminess. It doesn't. It stays poised.
