Dried Fig, Caramelised Sugar, Lime Marmalade
From the cool highlands of Chiapas, Sakubel is a washed Mexican coffee grown by Indigenous Tseltal farming communities using traditional shade-grown methods. In the cup: dried fig, caramelised sugar, and a lime marmalade finish - rounded and gently sweet, with enough character to hold its own as espresso or filter.

Sakubel comes from the highlands of Chiapas, where Indigenous Tseltal farming communities have been growing coffee using traditional shade-grown methods for generations. Grown at altitude and washed, it's a coffee that rewards patience - the cool mountain air of Los Altos de Chiapas slows the drying process and lets the flavours settle into something considered and well-defined.
In the cup, it's approachable without being plain. Dried fig brings a soft, jammy depth, caramelised sugar runs through the middle, and a lime marmalade note lifts the finish with a gentle citrus brightness. The sweetness is rounded rather than sharp, and the whole thing holds together with an easy balance that works across brew methods - whether you're pulling it as espresso or taking your time over filter.
It's the kind of coffee that doesn't demand anything of you, but has plenty to offer if you pay attention. Dear Green have been building direct relationships with producers for over a decade, and coffees like this one are where that care shows up in the cup.

About the Roaster
Dear Green was founded by Lisa Lawson in Glasgow in 2011 - one woman, one roaster, and a clear sense of what specialty coffee could be in Scotland. Fourteen years on, they're a B Corp-certified roastery with a full team, a training space, and sourcing built on direct relationships and transparency. There's also a Q Grader in house, which means every coffee on the list has been properly scrutinised before it gets anywhere near you.
