Named Pink Champagne by the farmer who grew it, Guzman is a Colombian single origin from Elkin Guzman's Finca El Mirador in Huila. An anaerobic natural process brings out rose water, raspberry and a soft bubblegum sweetness that stays with you long after the cup is empty. The kind of coffee that makes you put your phone down.

Floral, fruit-forward and quietly celebratory
Elkin Guzman has been farming coffee on his 31-hectare Finca El Mirador in Palestina, Huila for years, and this lot is the result of a decade of quiet experimentation. The Catiope variety - a cross between Caturra and an Ethiopian landrace that Elkin sourced from an experimental farm in Cauca - already brings something a little different to the cup. Pair that with an anaerobic natural process where the cherry ferments for 140 hours in sealed drums alongside a hand-cultivated culture of lactobacillus and saccharomyces cerevisiae, and you get something that earns its nickname: Pink Champagne.
In the cup, it's floral and fruit-forward - rose water, raspberry and a bubblegum sweetness that's more refined than it sounds. The finish has a soft, sparkling quality that feels celebratory without being showy. It works beautifully as a filter, where those delicate notes have room to open up, and it pulls well as an espresso too, adding a vivid, fruit-led edge to milk drinks.

About the Roaster
Press Coffee & Co started life in 2013 as a single espresso bar on Fleet Street, grew to seven sites across Central London, and in 2019 found its footing with a roastery in Herne Hill. Andy and Nelly now run it as a focused roasting operation - sourcing, roasting and supplying coffee to wholesale partners and home brewers alike, with a small, close-knit team who take the coffee seriously without making a performance of it.
