Assembly

A South London roaster that lives by its "Everything can always be better" mantra

Assembly Coffee is a London-based specialty coffee roastery, founded in 2014 following a series of conversations between leading independent cafés and restaurants across the UK. Shaped by input from the industry it serves, the business was built with a clear purpose: to source and roast some of the highest quality coffees in the world, guided by the needs and standards of its customers, and to play a more defined, collaborative role within the specialty coffee supply chain.

Their Coffee Range

Assembly Coffee’s product range is built around quality, precision and usability, supported by more than 100 years of combined experience across its team. The focus is not only on sourcing and roasting exceptional coffees, but also on helping customers get the best from them. To support this, Assembly provides starting recipes across five core brew methods, giving a clear foundation for dialling in flavour based on individual preference.

The range itself centres on carefully selected coffees that highlight origin, process and profile. Some of their top ranges include Guatemala - Santa Irene Geisha, a high-grade, expressive coffee with a light, refined profile. It presents notes of pomegranate, jasmine and a tea-like finish, reflecting the clarity and delicacy associated with Geisha varietals.
The Mexico Collection, a curated release showcasing coffees from Mexico, designed to highlight regional characteristics and seasonal quality. Positioned as part of Assembly’s “Elevated Brewing” range, it focuses on clarity, balance and approachability.
The Linarco Rodriguez Collection, a premium, producer-led collection featuring coffees from Linarco Rodriguez. This sits at the top end of the range, offering more distinctive and complex profiles, with an emphasis on traceability and craft at origin.

Across the range, the structure is consistent. Each coffee is selected and presented with a clear sense of origin and flavour, supported by practical guidance to ensure it can be brewed to its full potential.

More About Assembly Coffee

Assembly Coffee’s approach has been shaped by the needs of the specialty coffee movement as it has developed. From the outset, the roastery set out to be responsive and consistent in how it supports its wholesale partners, with decisions grounded in what customers require rather than internal preference.

In practice, this means coffees are sourced with clear purpose, guided by ongoing evaluation of both quantitative and qualitative data from across the supply chain. The aim is to make informed decisions at every stage, while continuing to question how value is created and shared. Alongside this, there is a focus on building a model that remains commercially and operationally sustainable over time.

Innovation sits at the centre of this approach. Assembly actively looks to collaborate with partners who share its ambition to move specialty coffee forward. This includes refining how quality is defined and communicated, improving sourcing practices to deliver greater value back to producers, and maintaining a clear standard for the coffees it roasts.

The result is a range served across leading independent cafés, premium restaurants and hotels in the UK, Europe and wider global markets, while also reaching customers brewing at home. Underpinning this is a network of long-term relationships with producers, hospitality operators, scientists and academics, all contributing to a shared goal: building a specialty coffee supply chain that is fair, sustainable and grounded in measurable quality.
